Preheat oven to 375˚. Spray an 8-ounce ramekin with nonstick cooking spray. Mix ¼ cup defrosted, shredded potatoes with ½ tablespoon melted butter. Bake in a ramekin for 10 minutes; remove from oven and set aside.
Scramble together 1 egg; 1 scallion (light green parts only), sliced; 1 tablespoon chopped veggies, such as bell pepper, spinach, or mushroom; and 1 teaspoon milk. Season with salt and pepper. Pour on top of hash-brown crust and bake for 18 to 20 minutes or until just set.

Preheat oven to 350˚. Cut 1 slice challah or brioche bread into bite-size pieces. Mix together 1 egg; 1 tablespoon milk; ¼ teaspoon orange zest or 1 teaspoon orange juice; ¼ teaspoon honey; a pinch of salt, and four raspberries (optional). Toss in bread pieces and let sit for 5 minutes. Spray 8-ounce ramekin with baking spray and fill with bread-egg mixture; bake for 20 to 25 minutes or just set.
Peanut butter-banana overnight oats: Prep this breakfast in bed dish the night before and it’ll be ready in the a.m.
In a small jar, add ½ cup uncooked rolled oats, 1 mashed banana, 1 tablespoon peanut butter, ½ cup milk or almond milk, and a pinch of salt (optional: add a dash of vanilla, cinnamon or bit of honey). Let sit overnight—that’s it! An alternative presentation idea: Instead of the jar, try serving a single portion in an oversized porcelain or plastic soup spoon for a fancy “amuse bouche.”
Pear-cucumber smoothie: This combo is refreshing, spa-like—and a low stain risk.
Blend together 2 pears, cored and sliced; ½ cucumber, peeled, cored and sliced; ½ cup plain yogurt; ½ cup milk or almond milk; 1 tablespoon mint, chopped; ½ teaspoon ginger, finely grated; ½ to ¾ cup ice.
